Your family will love this simple, healthy, protein-packed and flavorful turkey meatloaf recipe. It's one of my personal favorites and I make it several times a month! I like to substitute lean ground turkey for beef in many of my recipes. I make sure to get LEAN ground turkey when I'm doing my grocery shopping! Usually I like to stick to 97%. Most studies agree that lean ground turkey is healthier than ground beef (click to read one).

Ingredients: Healthy Turkey Meatloaf

1.5 lbs fresh ground turkey (97% lean)

3 cloves fresh garlic

1/2 yellow onion

1 green pepper

1 cup crushed whole wheat crackers

1 large egg

1 large egg white (1.5 tablespoons)

1 tablespoon olive oil

1/4 teaspoon salt (to taste)

2 tablespoons parsley

2 tablespoons basil

3 tablespoons Parmesan cheese

Ketchup and/or tomato sauce to top

Instructions:: Fry Onions, Mix Ingredients, Bake it Up.

Cook: fry Onions and Peppers on the stove-top with oil. 

Mix: all ingredients in a large bowl. Add cooked onions and peppers.

Bake: on middle rack for 45-60 minutes, until meat reaches internal temperature of 165 degrees and outside is crisped.
