Ingredients: Skinny Sweet Potato Casserole

1 Sweet Potato

1/3 cup Fat Free Greek Yogurt

1 Teaspoon of Cinnamon

A Pinch of Nutmeg

1/2 cup of Pecans

1/2 cup of Mini Marshmallows

1/2 scoop - 1 scoop Vanilla Protein Powder

Instructions: Healthy Homemade Sweet Potato Casserole

Peel and cube Sweet Potato

Boil on high for 20-30 minutes ( i usually poke with a fork to make sure its fully soft all the way through)

Strain Sweet Potatoes

Mash Sweet Potatoes with a fork or electric hand mixer

Add yogurt, cinnamon, brown sugar, nutmeg, protein powder. Mix.

Spread Sweet Potato mixture into baking dish. Layer Marshmallows and Pecans on top of Sweet Potato mixture.

Bake at 350 degrees for 30 minutes
