Cauliflower rice is an excellent healthy alternative to regular rice in almost every dish that calls for it. One serving of raw or uncooked cauliflower has only 25 calories, 5 grams of carbohydrates and 2 grams of dietary fiber. Compare that to regular rice and it's easy to see the benefits of cauliflower. The same size serving of regular rice (100 grams) has 130 calories (over 5x the amount), 28.7 grams of carbohydrates (almost 6 times as much as cauliflower rice) and almost zero fiber.

Ingredients: Cauliflower Rice Pudding

1/2 cup Cauliflower Rice

1/4 cup Swerve brand Brown Sugar

4 ounces Cream Cheese (Fat Free or 1/3 Less Fat)

2 Egg Yolks

1/2 cup Light Cream

1/2 cup Unsweetened Vanilla Almond Milk

1 teaspoon Vanilla extract

1 scoop Protein Powder (Vanilla flavor)

1/2 tablespoon Cinnamon

1/4 cup Raisins (optional, to top)

Instructions: Cauliflower Rice Pudding Recipe

Place: cauliflower rice in microwave-safe bowl. Add half of the cream (1/4 cup), protein powder, vanilla, brown sugar and cinnamon. 

Microwave: on High for Ninety (90) Seconds. Let Stand for 15 minutes.

Beat: egg yolks and the rest of the cream (1/4 cup). Set aside.

Pour: almond milk in saucepan and add cream cheese. Cook over Medium heat, stirring constantly until thickened. Add rice and egg mixture and stir to re-thicken.

Pour into 4 small ramekins and refrigerate for 1-3 hours. Makes four servings.
