Cutting fast food out of your diet is an immediate and easy way to decrease your intake of calories, fat and almost everything unhealthy. But ugh sometimes it just sounds soooo good! Don't worry - this healthy twist on your favorite KFC dinner is packed with nutrients and protein and very low in carbs. Instead of frying the chicken in oil we bake it to perfection and layer it with mashed cauliflower instead of potatoes, to cut back on carbs. (check out some of my other cauliflower recipes). The layers of juicy chicken, sweet corn and hearty mashed cauliflower will hit the spot! And, best of all - you can enjoy this meal entirely guilt-free.
