Healthy “KFC” Bowl Recipe

'Low-Carb' and 'KFC' in the same sentence? Yes! This recipe calls for some healthy alternative ingredients for a low-carb KFC bowl dinner.

Cutting fast food out of your diet is an immediate and easy way to decrease your intake of calories, fat and almost everything unhealthy. But ugh sometimes it just sounds soooo good! Don't worry - this healthy twist on your favorite KFC dinner is packed with nutrients and protein and very low in carbs. Instead of frying the chicken in oil we bake it to perfection and layer it with mashed cauliflower instead of potatoes, to cut back on carbs. (check out some of my other cauliflower recipes). The layers of juicy chicken, sweet corn and hearty mashed cauliflower will hit the spot! And, best of all - you can enjoy this meal entirely guilt-free. This KFC Bowl recipe is low in carbs and high in protein. Enjoy!

Ingredients: Healthy KFC Bowl Recipe

1 boneless Chicken Breast (cubed)

3/4 cups beef gravy (like McCormick "Simply Better")

1 package Mashed Cauliflower (like Birds Eye brand)

1 can Sweet Corn

1/2 cup Fat-Free Shredded Cheddar Cheese

1 packet Extra-Crispy Shake 'n Bake

1/2 cup Almond Flour

2 Eggs

Healthy KFC Bowl with Baked Chicken and Cauliflower Mashed Potatoes!

Instructions: Homemade Low-Carb KFC Bowl

Toss cubed chicken in almond flour, Dip in egg, then Roll in Shake 'n Bake

Bake on 390 degrees for 20-25 minutes 

Heat beef gravy in microwave per instructions on container

Heat corn slowly on stove top

Heat mashed cauliflower in the microwave per instructions

Layer in whatever order you like! I usually do: mashed cauliflower, non-fat cheddar cheese (1/4 cup), corn, chicken on top and topped with gravy and the remainder of the cheese. Enjoy this low-carb healthy KFC Bowl!
